A delicious and healthy BBQ Chicken Salad that combines shredded chicken with fresh vegetables and a tangy dressing.

- 2 cups cooked chicken, shredded
- 1 cup romaine lettuce, chopped
- 1 cup mixed greens
- 1/2 cup cherry tomatoes, halved
- 1/2 cup corn, canned or frozen (thawed)
- 1/2 cup black beans, rinsed and drained
- 1/4 cup red onion, thinly sliced
- 1/4 cup shredded cheddar cheese
- 1/4 cup BBQ sauce
- 2 tablespoons ranch dressing
- Salt and pepper to taste
- 1 avocado, sliced (optional)
- Tortilla strips for garnish (optional)
Instructions
- In a large bowl, combine the shredded chicken, romaine lettuce, mixed greens, cherry tomatoes, corn, black beans, red onion, and cheddar cheese. Toss gently to mix all the ingredients evenly.
- Drizzle the BBQ sauce and ranch dressing over the salad. Toss again until the salad is well coated with the dressings.
- Season with salt and pepper to taste.
- If using, top the salad with sliced avocado and garnish with tortilla strips for added crunch.
- Serve immediately or chill in the refrigerator for about 30 minutes to let the flavors meld together.
Notes
- For a spicier kick, add diced jalapeños or a splash of hot sauce to the salad.
- Substitute grilled shrimp or tofu for the chicken to create a different protein option.
