Description

BBQ Pineapple Chicken Kabobs are a delicious and easy-to-make grilled dish featuring tender chicken, sweet pineapple, and colorful vegetables.

Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 cup fresh pineapple, cut into 1-inch cubes
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 green bell pepper, cut into 1-inch pieces
  • 1 small red onion, cut into wedges
  • 1/2 cup barbecue sauce
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Wooden or metal skewers

Instructions

  1. Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  2. In a large bowl, combine the chicken cubes, barbecue sauce, olive oil, garlic powder, onion powder, salt, and pepper. Mix well to ensure the chicken is evenly coated.
  3. Thread the chicken, pineapple, bell peppers, and onion onto the skewers, alternating between the ingredients.
  4. Place the kabobs on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and reaches an internal temperature of 165°F.
  5. Remove from the grill and let rest for a few minutes before serving.

Notes

  • For a spicy kick, add some jalapeño slices to the skewers.
  • You can substitute the chicken with shrimp or tofu for a different protein option.
  • Serve with a side of rice or a fresh salad for a complete meal.
