Description

A delicious and spicy blackened salmon dish topped with fresh mango salsa, perfect for a flavorful meal.


Ingredients

  • 2 (6-ounce) salmon fillets
  • 2 tablespoons olive oil
  • 1 tablespoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cayenne pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 ripe mango, diced
  • ½ red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • ¼ cup fresh cilantro, chopped
  • 1 lime, juiced

Instructions

  1. Heat a large skillet over medium-high heat. Add olive oil to the pan.
  2. In a small bowl, mix paprika, garlic powder, onion powder, cayenne pepper, thyme, salt, and black pepper.
  3. Rub the spice mixture evenly over both sides of the salmon fillets.
  4. Once the skillet is hot, carefully place the salmon fillets in the pan. Cook for 4-5 minutes on each side or until the salmon is cooked through and has a nice blackened crust.
  5. While the salmon is cooking, prepare the mango salsa. In a medium bowl, combine diced mango, red onion, jalapeño, cilantro, and lime juice. Mix well and set aside.
  6. Once the salmon is done, remove it from the skillet and let it rest for a couple of minutes.
  7. Serve the blackened salmon topped with the fresh mango salsa.

Notes

  • For a spicier salsa, leave some seeds in the jalapeño or add a pinch of cayenne.
  • Serve with a side of rice or quinoa for a complete meal.
