A delicious and spicy blackened salmon dish topped with fresh mango salsa, perfect for a flavorful meal.

- 2 (6-ounce) salmon fillets
- 2 tablespoons olive oil
- 1 tablespoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon cayenne pepper
- 1 teaspoon dried thyme
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 ripe mango, diced
- ½ red onion, finely chopped
- 1 jalapeño, seeded and minced
- ¼ cup fresh cilantro, chopped
- 1 lime, juiced
Instructions
- Heat a large skillet over medium-high heat. Add olive oil to the pan.
- In a small bowl, mix paprika, garlic powder, onion powder, cayenne pepper, thyme, salt, and black pepper.
- Rub the spice mixture evenly over both sides of the salmon fillets.
- Once the skillet is hot, carefully place the salmon fillets in the pan. Cook for 4-5 minutes on each side or until the salmon is cooked through and has a nice blackened crust.
- While the salmon is cooking, prepare the mango salsa. In a medium bowl, combine diced mango, red onion, jalapeño, cilantro, and lime juice. Mix well and set aside.
- Once the salmon is done, remove it from the skillet and let it rest for a couple of minutes.
- Serve the blackened salmon topped with the fresh mango salsa.
Notes
- For a spicier salsa, leave some seeds in the jalapeño or add a pinch of cayenne.
- Serve with a side of rice or quinoa for a complete meal.
