A delicious and refreshing BLT Chicken Salad that combines the classic flavors of a BLT sandwich with tender chicken and fresh vegetables.
Ingredients

- 1 cup cooked chicken breast, shredded or diced
- 4 slices of bacon, cooked and crumbled
- 1 cup cherry tomatoes, halved
- 1 cup romaine lettuce, chopped
- 1/2 cup cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine the cooked chicken, crumbled bacon, cherry tomatoes, romaine lettuce, cucumber, and red onion.
- In a separate small bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper until smooth.
- Pour the dressing over the chicken mixture and gently toss until everything is well coated.
- Taste and adjust seasoning if necessary.
- Serve immediately or refrigerate for about 30 minutes to let the flavors meld.
Notes
- For a lighter version, substitute Greek yogurt for half of the mayonnaise.
- Add avocado slices for extra creaminess and healthy fats.
