- 2 cups rolled oats
- 1 cup mashed ripe bananas (about 2 medium bananas)
- 1 cup blueberries (fresh or frozen)
- 1/2 cup almond milk (or any milk of your choice)
- 1/4 cup honey or maple syrup
- 1/4 cup almond butter (or peanut butter)
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal.
- In a large bowl, combine the rolled oats, baking powder, cinnamon, and salt. Mix well.
- In another bowl, mix together the mashed bananas, almond milk, honey (or maple syrup), almond butter, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir until fully combined. Gently fold in the blueberries.
- Pour the mixture into the prepared baking dish and spread it evenly.
- Bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.
- Allow the bars to cool in the pan for about 10 minutes, then lift them out using the parchment paper and let them cool completely on a wire rack before cutting into squares.
Notes
- For added texture, mix in 1/4 cup of chopped nuts or seeds, such as walnuts or chia seeds.
- Substitute the blueberries with other fruits like raspberries, chopped apples, or dried cranberries for a different flavor.
