Delicious and easy-to-make blueberry oatmeal breakfast bars that are perfect for a healthy start to your day.


Ingredients

  • 2 cups rolled oats
  • 1 cup mashed ripe bananas (about 2 medium bananas)
  • 1 cup blueberries (fresh or frozen)
  • 1/2 cup almond milk (or any milk of your choice)
  • 1/4 cup honey or maple syrup
  • 1/4 cup almond butter (or peanut butter)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal.
  2. In a large bowl, combine the rolled oats, baking powder, cinnamon, and salt. Mix well.
  3. In another bowl, mix together the mashed bananas, almond milk, honey (or maple syrup), almond butter, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until fully combined. Gently fold in the blueberries.
  5. Pour the mixture into the prepared baking dish and spread it evenly.
  6. Bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.
  7. Allow the bars to cool in the pan for about 10 minutes, then lift them out using the parchment paper and let them cool completely on a wire rack before cutting into squares.

Notes

  • For added texture, mix in 1/4 cup of chopped nuts or seeds, such as walnuts or chia seeds.
  • Substitute the blueberries with other fruits like raspberries, chopped apples, or dried cranberries for a different flavor.
