Description

Delicious breakfast tacos filled with bacon, avocado, and fresh ingredients that are sure to impress.


Ingredients

  • 8 small corn tortillas
  • 6 ounces cooked bacon, chopped
  • 2 ripe avocados, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • Salt and pepper to taste
  • Optional: hot sauce for serving

Instructions

  1. In a skillet over medium heat, warm the corn tortillas for about 30 seconds on each side until pliable. Keep them warm by wrapping them in a clean kitchen towel.
  2. In a mixing bowl, combine the diced avocados, cherry tomatoes, lime juice, salt, and pepper. Gently toss to combine.
  3. To assemble the tacos, place a few pieces of chopped bacon on each tortilla. Top with the avocado and tomato mixture, followed by a sprinkle of shredded cheddar cheese and fresh cilantro.
  4. Serve immediately with hot sauce on the side if desired.
