- 1 medium apple, diced (preferably a sweet variety like Honeycrisp or Fuji)
- 1/2 cup shredded carrots
- 1/4 cup red onion, finely chopped
- 1/4 cup sunflower seeds
- 1/4 cup plain Greek yogurt
- 2 tablespoons honey
- 1 tablespoon apple cider vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a large mixing bowl, combine the broccoli florets, blueberries, diced apple, shredded carrots, red onion, and sunflower seeds. Toss gently to mix the ingredients evenly.
- In a separate small bowl, whisk together the Greek yogurt, honey, apple cider vinegar, salt, and black pepper until smooth.
- Pour the dressing over the salad mixture and toss until all the ingredients are well coated.
- For best flavor, cover the salad and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
