A refreshing and hearty Chicken Caesar Pasta Salad perfect for summer gatherings.
Ingredients

- 8 ounces rotini pasta
- 1 pound cooked chicken breast, diced
- 1 cup cherry tomatoes, halved
- 1 cup romaine lettuce, chopped
- ½ cup Caesar dressing
- ½ cup grated Parmesan cheese
- ¼ cup croutons
- Salt and pepper to taste
- 1 tablespoon olive oil (optional)
Instructions
- Cook the rotini pasta according to package instructions. Drain and rinse under cold water to cool.
- In a large bowl, combine the cooked pasta, diced chicken, cherry tomatoes, and chopped romaine lettuce.
- Drizzle the Caesar dressing over the mixture and toss gently to combine.
- Add the grated Parmesan cheese and croutons, then season with salt and pepper to taste. Toss again to mix well.
- If desired, drizzle with olive oil for extra flavor and toss once more.
- Chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
Notes
- For a lighter version, substitute Greek yogurt for half of the Caesar dressing.
- Add sliced cucumbers or bell peppers for extra crunch and nutrition.
