Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 2 medium sweet potatoes, peeled and diced (about 3 cups)
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1/4 cup fresh lime juice
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces and season with chili powder, cumin, garlic powder, onion powder, salt, and pepper. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.
  2. In the same skillet, add the diced sweet potatoes. Cook for about 10 minutes, stirring occasionally, until they begin to soften.
  3. Add the diced red and green bell peppers to the skillet with the sweet potatoes. Cook for an additional 5 minutes, or until the peppers are tender and the sweet potatoes are fully cooked.
  4. Return the cooked chicken to the skillet and pour in the lime juice. Stir to combine and cook for another 2-3 minutes to heat everything through.
  5. Remove from heat and sprinkle with fresh cilantro before serving.

  • For added heat, consider adding diced jalapeños or a pinch of cayenne pepper to the chicken seasoning.
