- 8 ounces rotini pasta
- 1 cup cooked chicken, diced
- 4 slices bacon, cooked and crumbled
- 1 cup cherry tomatoes, halved
- 1 cup romaine lettuce, chopped
- 1/2 cup cheddar cheese, shredded
- 1/4 cup red onion, finely chopped
- 1/2 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1 tablespoon apple cider vinegar
- Salt and pepper to taste
Instructions
- Cook the rotini pasta according to package instructions. Drain and rinse under cold water to cool.
- In a large bowl, combine the cooled pasta, diced chicken, crumbled bacon, cherry tomatoes, romaine lettuce, cheddar cheese, and red onion.
- In a separate small bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper until smooth.
- Pour the dressing over the pasta mixture and toss until everything is evenly coated.
- Chill the pasta salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
Notes
- For a lighter version, substitute Greek yogurt for half of the mayonnaise.
- Add diced avocado or sliced cucumbers for extra freshness and crunch.
