A delicious twist on a classic club sandwich, this pasta salad combines rotini pasta with chicken, bacon, and fresh vegetables for a satisfying meal.


Ingredients

  • 8 ounces rotini pasta
  • 1 cup cooked chicken, diced
  • 4 slices bacon, cooked and crumbled
  • 1 cup cherry tomatoes, halved
  • 1 cup romaine lettuce, chopped
  • 1/2 cup cheddar cheese, shredded
  • 1/4 cup red onion, finely chopped
  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta according to package instructions. Drain and rinse under cold water to cool.
  2. In a large bowl, combine the cooled pasta, diced chicken, crumbled bacon, cherry tomatoes, romaine lettuce, cheddar cheese, and red onion.
  3. In a separate small bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper until smooth.
  4. Pour the dressing over the pasta mixture and toss until everything is evenly coated.
