- 1 can (13.5 ounces) coconut milk
- 1/4 cup fresh lime juice (about 2 limes)
- 2 tablespoons honey
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 tablespoon olive oil
- 1/4 cup fresh cilantro, chopped (for garnish)
- Lime wedges (for serving)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, whisk together the coconut milk, lime juice, honey, garlic, ginger, salt, pepper, and paprika until well combined.
- Place the chicken thighs in a large baking dish and pour the coconut lime mixture over the chicken, ensuring all pieces are well coated.
- Drizzle olive oil over the chicken and give it a gentle toss to mix.
- Bake in the preheated oven for 30-35 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Remove from the oven and let it rest for 5 minutes. Garnish with fresh cilantro and serve with lime wedges.

- For a spicier kick, add 1 teaspoon of red pepper flakes to the coconut milk mixture.
