Ingredients

  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil (optional)
  • 1 tablespoon lemon juice (optional)

Instructions

  1. In a medium bowl, combine the cottage cheese, garlic powder, and black pepper. Mix well until smooth.
  2. Lay the tortilla flat on a clean surface or plate.
  3. Spread the cottage cheese mixture evenly over the tortilla, leaving a small border around the edges.
  4. Layer the spinach leaves, shredded carrots, and diced bell pepper on top of the cottage cheese.
  5. If desired, drizzle olive oil and lemon juice over the vegetables for added flavor.
  6. Starting from one edge, carefully roll the tortilla tightly to form a wrap.
  7. Slice the wrap in half diagonally and serve immediately, or wrap in plastic wrap and refrigerate for up to 2 hours before serving.
