- 1/2 cup spinach leaves, fresh

- 1/4 cup diced bell pepper (any color)
- 1/4 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil (optional)
- 1 tablespoon lemon juice (optional)
Instructions
- In a medium bowl, combine the cottage cheese, garlic powder, and black pepper. Mix well until smooth.
- Lay the tortilla flat on a clean surface or plate.
- Spread the cottage cheese mixture evenly over the tortilla, leaving a small border around the edges.
- Layer the spinach leaves, shredded carrots, and diced bell pepper on top of the cottage cheese.
- If desired, drizzle olive oil and lemon juice over the vegetables for added flavor.
- Starting from one edge, carefully roll the tortilla tightly to form a wrap.
- Slice the wrap in half diagonally and serve immediately, or wrap in plastic wrap and refrigerate for up to 2 hours before serving.
