Delicious and hearty Cowboy Cookies packed with oats, chocolate chips, and nuts.

- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups old-fashioned rolled oats
- 1 cup semi-sweet chocolate chips
- 1 cup chopped pecans or walnuts
- 1 cup shredded coconut (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- Gradually add the flour mixture to the wet ingredients, mixing until just combined.
- Fold in the oats, chocolate chips, nuts, and coconut (if using) until evenly distributed.
- Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are golden brown. The centers may look slightly underbaked; they will continue to cook on the baking sheet.
- Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely.
Notes
- For a chewier cookie, chill the dough for at least 30 minutes before baking.
- You can substitute the chocolate chips with butterscotch or peanut butter chips for a different flavor.
