Description

A delicious and creamy pasta dish featuring spinach and mushrooms, perfect for a quick weeknight dinner.


Ingredients

  • 8 ounces fettuccine or your favorite pasta
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 5 cups fresh spinach
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside, reserving ½ cup of pasta water.
  2. In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté for about 3 minutes until translucent.
  3. Add the minced garlic and sliced mushrooms to the skillet. Cook for an additional 5-7 minutes until the mushrooms are browned and tender.
  4. Stir in the fresh spinach and cook until wilted, about 2-3 minutes.
  5. Lower the heat and pour in the heavy cream, stirring to combine. Add the grated Parmesan cheese, salt, pepper, and Italian seasoning. Mix until the cheese has melted and the sauce is creamy.
  6. Add the cooked pasta to the skillet, tossing to coat the pasta in the sauce. If the sauce is too thick, add a little reserved pasta water until the desired consistency is reached.
  7. Serve immediately, garnished with fresh parsley.

Notes

  • For added protein, consider adding cooked chicken or shrimp to the dish.
  • Swap out the spinach for kale or add sun-dried tomatoes for a different flavor profile.
