Creamy Spinach Turkey Meatballs are a delicious and healthy dish that combines ground turkey with fresh spinach and a creamy sauce.
Ingredients
Scale
- 1 pound ground turkey
- 1 cup fresh spinach, chopped
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup milk
- 1 large egg
- 2 cloves garlic, minced
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 teaspoon red pepper flakes (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- In a large bowl, combine the ground turkey, chopped spinach, breadcrumbs, Parmesan cheese, milk, egg, minced garlic, onion powder, Italian seasoning, salt, and pepper. Mix until well combined.
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Form the turkey mixture into meatballs, about 1.5 inches in diameter, and place them on the prepared baking sheet.
- Bake the meatballs in the preheated oven for 20-25 minutes, or until cooked through and golden brown.
- While the meatballs are baking, heat olive oil in a large skillet over medium heat. Add the heavy cream and chicken broth, stirring to combine.
- Once the meatballs are done, carefully transfer them to the skillet with the cream sauce. Simmer for an additional 5-7 minutes, allowing the flavors to meld.
- If desired, add red pepper flakes for a bit of heat. Garnish with fresh parsley before serving.
Notes
- For a lighter version, substitute ground turkey with ground chicken or lean beef.
- Add some chopped sun-dried tomatoes or mushrooms to the meatball mixture for extra flavor and texture.
