Description

Crispy Baked Honey BBQ Popcorn Chicken is an irresistible dish that combines tender chicken pieces with a crunchy coating and a sweet and tangy BBQ sauce.


Ingredients

  • 2 pounds boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup buttermilk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup all-purpose flour
  • 2 cups panko breadcrumbs
  • 1/2 cup honey
  • 1/2 cup BBQ sauce
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the buttermilk, garlic powder, onion powder, smoked paprika, salt, and black pepper. Add the chicken pieces to the marinade and let them soak for at least 30 minutes (or up to 2 hours in the refrigerator for more flavor).
  3. In a separate bowl, place the flour. In another bowl, add the panko breadcrumbs.
  4. Remove the chicken from the marinade, allowing excess to drip off. Dredge each piece in flour, shaking off the excess, then dip it back into the buttermilk, and finally coat it with panko breadcrumbs. Place the coated chicken pieces on the prepared baking sheet.
  5. Drizzle the olive oil over the chicken pieces to help them crisp up in the oven. Bake for 20-25 minutes, or until the chicken is golden brown and cooked through.
  6. While the chicken is baking, mix the honey and BBQ sauce in a small bowl. Once the chicken is done, remove it from the oven and toss it in the honey BBQ sauce until well coated.
  7. Return the sauced chicken to the baking sheet and bake for an additional 5-7 minutes to caramelize the sauce.

Notes

  • For a spicier kick, add a teaspoon of cayenne pepper to the flour mixture.
  • To make it gluten-free, substitute all-purpose flour with almond flour and use gluten-free panko breadcrumbs.
