- 1 pound salmon fillet, skin removed and cut into bite-sized pieces
- 1 cup panko breadcrumbs
- 1/2 cup all-purpose flour
- 2 large eggs
- 1 teaspoon garlic powder
- 1 teaspoon paprika

- 1/4 teaspoon black pepper
- 1/4 cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon sriracha (adjust to taste)
- 2 tablespoons green onions, chopped (for garnish)
- Lemon wedges (for serving)
Instructions
- Preheat the oven to 425°F. Line a baking sheet with parchment paper.
- In a shallow bowl, combine flour, garlic powder, paprika, salt, and black pepper.
- In another bowl, beat the eggs.
- In a third bowl, place the panko breadcrumbs.
- Coat each piece of salmon in the flour mixture, then dip it into the beaten eggs, and finally coat it with panko breadcrumbs.
- Place the coated salmon bites on the prepared baking sheet.
- Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and the panko is golden brown and crispy.
- While the salmon is baking, prepare the bang bang sauce by mixing mayonnaise, sweet chili sauce, and sriracha in a small bowl. Adjust the sriracha to your preferred spice level.
- Once the salmon bites are done, remove them from the oven and drizzle with the bang bang sauce.
- Garnish with chopped green onions and serve with lemon wedges on the side.
Notes
- For extra crunch, consider frying the salmon bites in a skillet with oil instead of baking.
