- 2 pounds boneless, skinless chicken breasts
- 1 packet taco seasoning (1 ounce)
- 1 cup salsa
- 1 can black beans, drained and rinsed (15 ounces)
- 1 cup corn (frozen or canned)
- 1 tablespoon lime juice
- Salt and pepper to taste
- Tortillas for serving
- Toppings: shredded cheese, lettuce, diced tomatoes, sour cream, avocado, cilantro
Instructions
- Place the chicken breasts in the bottom of the crockpot.
- Sprinkle the taco seasoning evenly over the chicken.
- Pour the salsa over the seasoned chicken, followed by the black beans and corn.
- Drizzle the lime juice over the top and add salt and pepper to taste.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and shreds easily with a fork.
- Once cooked, shred the chicken in the crockpot using two forks and mix it with the other ingredients.
- Serve the chicken mixture in tortillas and top with your choice of toppings.
Notes
- For a spicier kick, add diced jalapeños or a splash of hot sauce to the crockpot.
- Substitute the chicken with shredded beef or pork for a different flavor profile.
