Ingredients

- 2 cups cherry tomatoes, halved
- 1 large cucumber, diced
- 1/4 red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup feta cheese, crumbled
- 3 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- In a large bowl, combine the halved cherry tomatoes, diced cucumber, sliced red onion, and chopped parsley.
- In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Sprinkle the crumbled feta cheese on top and give it another light toss.
- Chill the salad in the refrigerator for at least 15 minutes before serving to allow the flavors to meld.
Notes
- For a bit of crunch, add 1/4 cup of sliced bell peppers or radishes.
