- 1 pound boneless, skinless chicken breasts
- 1/2 cup buffalo sauce
- 6 cups mixed salad greens (such as romaine, spinach, and arugula)
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/2 cup blue cheese crumbles
- 1/4 cup ranch dressing (or to taste)
- Salt and pepper to taste
- Olive oil for grilling
Instructions
- Preheat your grill to medium-high heat.
- Season the chicken breasts with salt and pepper, then brush lightly with olive oil.
- Grill the chicken for about 6-7 minutes on each side, or until fully cooked (internal temperature should reach 165°F).
- Remove the chicken from the grill and let it rest for 5 minutes before slicing.
- In a bowl, toss the salad greens, cherry tomatoes, cucumber, and red onion together.
- Drizzle the ranch dressing over the salad and toss to combine.
- Slice the grilled chicken and place it on top of the salad.
- Drizzle the buffalo sauce over the chicken and sprinkle with blue cheese crumbles.
- Serve immediately.

- For a spicier kick, use extra hot buffalo sauce or add sliced jalapeños to the salad.
- Substitute grilled shrimp or tofu for the chicken for a different protein option.
