A delicious and healthy Grilled Chicken Caesar Salad recipe that combines grilled chicken, fresh romaine lettuce, and a creamy Caesar dressing.

- 2 boneless, skinless chicken breasts (about 1 pound total)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 6 cups romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- ½ cup Caesar dressing
- ½ cup grated Parmesan cheese
- 1 cup croutons
Instructions
- Preheat the grill to medium-high heat.
- In a small bowl, mix together olive oil, garlic powder, Italian seasoning, salt, and pepper. Brush the mixture over both sides of the chicken breasts.
- Place the chicken on the grill and cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F. Remove from the grill and let rest for 5 minutes before slicing.
- In a large bowl, combine the chopped romaine lettuce, cherry tomatoes, Caesar dressing, and half of the Parmesan cheese. Toss well to coat the lettuce evenly.
- Divide the salad mixture among four plates. Top each salad with sliced grilled chicken, remaining Parmesan cheese, and croutons.
- Serve immediately and enjoy!
Notes
- For added flavor, marinate the chicken in the olive oil mixture for at least 30 minutes before grilling.
- To make it a lighter option, use a yogurt-based Caesar dressing or substitute grilled shrimp for the chicken.
