- 2 large boneless, skinless chicken breasts
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1 cup cherry tomatoes, halved
- 1 cup fresh mozzarella balls, drained
- 1/4 cup fresh basil leaves, chopped
- 1 tablespoon balsamic glaze
- 1 teaspoon garlic powder
Instructions
- Preheat your grill to medium-high heat.
- Season the chicken breasts with salt, pepper, and garlic powder on both sides.
- Drizzle olive oil over the chicken to coat.
- Place the chicken on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F.
- During the last few minutes of cooking, add the cherry tomatoes and mozzarella balls to the grill to warm them slightly.
- Once the chicken is cooked, remove it from the grill and let it rest for 5 minutes.
- Top each chicken breast with grilled tomatoes, mozzarella, and chopped basil.
- Drizzle with balsamic glaze before serving.
Notes
- This dish pairs well with a side salad or grilled vegetables.
- For added flavor, marinate the chicken in Italian dressing for 30 minutes before grilling.
- You can also substitute the cherry tomatoes with sun-dried tomatoes for a different taste.
