A delicious and tropical grilled chicken recipe featuring mango and pineapple.

- 2 large chicken breasts (about 1 pound)
- 1 cup fresh pineapple, diced
- 1 cup ripe mango, diced
- 1/4 cup soy sauce
- 2 tablespoons honey
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon ground ginger
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- Fresh cilantro, for garnish
Instructions
- In a medium bowl, combine the diced pineapple, mango, soy sauce, honey, olive oil, minced garlic, ground ginger, black pepper, and red pepper flakes. Mix well to create a marinade.
- Place the chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over the chicken. Seal the bag or cover the dish and refrigerate for at least 1 hour, or up to 4 hours for more flavor.
- Preheat the grill to medium-high heat. Remove the chicken from the marinade and discard the marinade.
- Grill the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F and the chicken is cooked through.
- Remove the chicken from the grill and let it rest for 5 minutes before slicing.
- Serve the grilled chicken topped with the remaining fresh pineapple and mango. Garnish with fresh cilantro.
Notes
- For added flavor, marinate the chicken overnight.
- Substitute the chicken with shrimp or tofu for a different protein option.
