- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 pound ground turkey
- 1 packet taco seasoning (about 1 ounce)
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) corn, drained
- 1 can (10 ounces) diced tomatoes with green chilies
- 1 cup cooked rice (white or brown)
- 1 cup shredded cheddar cheese
- 1 cup salsa
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until softened.
- Add the minced garlic and cook for another minute until fragrant.
- Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes.
- Stir in the taco seasoning, black beans, corn, diced tomatoes, and cooked rice. Mix well and let it simmer for about 5 minutes. Season with salt and pepper to taste.
- Transfer the mixture to a greased 9×13-inch baking dish. Spread the salsa evenly over the top.
- Sprinkle the shredded cheddar cheese over the salsa.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let it cool for a few minutes. Garnish with fresh cilantro before serving.
Notes
- For added flavor, consider topping the casserole with sliced jalapeños or avocado before serving.
- You can substitute ground turkey with ground beef or chicken for a different taste.
- If you prefer a spicier dish, use hot salsa or add diced green chilies to the mixture.
