Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 pound ground turkey
  • 1 packet taco seasoning (about 1 ounce)
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 1 can (10 ounces) diced tomatoes with green chilies
  • 1 cup cooked rice (white or brown)
  • 1 cup shredded cheddar cheese
  • 1 cup salsa
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until softened.
  3. Add the minced garlic and cook for another minute until fragrant.
  4. Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes.
  5. Stir in the taco seasoning, black beans, corn, diced tomatoes, and cooked rice. Mix well and let it simmer for about 5 minutes. Season with salt and pepper to taste.
  6. Transfer the mixture to a greased 9×13-inch baking dish. Spread the salsa evenly over the top.
  7. Sprinkle the shredded cheddar cheese over the salsa.
  8. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  9. Remove from the oven and let it cool for a few minutes. Garnish with fresh cilantro before serving.
