Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 pound ground turkey
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 6 cups chicken broth
  • 1 cup uncooked brown rice
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 2 cups fresh spinach, chopped
  • Juice of 1 lemon

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
  2. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Add the ground turkey to the pot, breaking it apart with a spoon. Cook until browned, about 5-7 minutes. Drain any excess fat if necessary.
  4. Stir in the diced carrots, celery, thyme, oregano, salt, and black pepper. Cook for another 5 minutes, allowing the vegetables to soften slightly.
  5. Pour in the chicken broth and bring the mixture to a boil. Once boiling, add the uncooked brown rice and diced tomatoes.
  6. Reduce the heat to low, cover, and simmer for 30-35 minutes, or until the rice is tender.
  7. In the last few minutes of cooking, stir in the chopped spinach and lemon juice. Cook until the spinach is wilted, about 2-3 minutes.
  8. Serve hot, garnished with additional lemon wedges if desired.

Notes

  • For added flavor, consider stirring in a tablespoon of soy sauce or Worcestershire sauce just before serving.
  • You can substitute quinoa for brown rice for a different texture and flavor.
  • If you prefer a spicier soup, add a pinch of red pepper flakes or a dash of hot sauce.
