Ingredients

  • 2 tablespoons olive oil
  • 1 pound beef stew meat, cut into 1-inch cubes
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 medium carrots, sliced
  • 2 stalks celery, sliced
  • 1 medium potato, diced
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 4 cups beef broth
  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 cups fresh spinach (optional)

Instructions

  1. In a large pot, heat the olive oil over medium-high heat. Add the beef stew meat and brown on all sides, about 5-7 minutes.
  2. Add the chopped onion and minced garlic to the pot, cooking until the onion is translucent, about 3-4 minutes.
  3. Stir in the carrots, celery, and potato, cooking for another 5 minutes.
  4. Pour in the diced tomatoes with their juice and the beef broth. Add the green beans, thyme, oregano, salt, and pepper.
  5. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the beef is tender.
  6. If using, stir in the fresh spinach during the last 5 minutes of cooking.
  7. Taste and adjust seasoning if necessary before serving.

Notes

  • For a spicier kick, add a pinch of red pepper flakes or a diced jalapeño during the cooking process.
