  • 1 pound boneless, skinless chicken breasts
  • 1 cup BBQ sauce
  • 1/4 cup honey
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup chopped green onions (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, mix together the BBQ sauce and honey until well combined.
  3. Season the chicken breasts with garlic powder, onion powder, salt, and pepper.
  4. Heat olive oil in a large oven-safe skillet over medium-high heat. Add the chicken breasts and sear for about 3-4 minutes on each side until golden brown.
  5. Pour the honey BBQ mixture over the chicken, ensuring it’s well coated.
  6. Transfer the skillet to the preheated oven and bake for 25-30 minutes or until the chicken is cooked through (internal temperature should reach 165°F).
  7. While the chicken is baking, prepare the cooked rice according to package instructions if not already done.
  8. Once the chicken is done, remove it from the oven and let it rest for 5 minutes before slicing.
  9. Serve the sliced chicken over a bed of rice and drizzle with any remaining BBQ sauce from the skillet. Garnish with chopped green onions.
