- 2 cups cooked white rice
- 1 pound boneless, skinless chicken breasts
- 1 cup BBQ sauce
- 1/4 cup honey
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1/2 cup chopped green onions (for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, mix together the BBQ sauce and honey until well combined.
- Season the chicken breasts with garlic powder, onion powder, salt, and pepper.
- Heat olive oil in a large oven-safe skillet over medium-high heat. Add the chicken breasts and sear for about 3-4 minutes on each side until golden brown.
- Pour the honey BBQ mixture over the chicken, ensuring it’s well coated.
- Transfer the skillet to the preheated oven and bake for 25-30 minutes or until the chicken is cooked through (internal temperature should reach 165°F).
- While the chicken is baking, prepare the cooked rice according to package instructions if not already done.
- Once the chicken is done, remove it from the oven and let it rest for 5 minutes before slicing.
- Serve the sliced chicken over a bed of rice and drizzle with any remaining BBQ sauce from the skillet. Garnish with chopped green onions.
Notes
- For a spicier kick, add a teaspoon of cayenne pepper to the BBQ sauce mixture.
- Substitute brown rice or quinoa for a healthier grain option.
