- 2 large chicken breasts (about 1 pound total)
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1/4 cup honey
- 2 tablespoons chipotle sauce (adjust to taste)
- 1 cup cooked brown rice
- 1 cup black beans, drained and rinsed
- 1 cup corn (fresh, frozen, or canned)
- 1 cup cherry tomatoes, halved
- 1 avocado, sliced
- 1/4 cup chopped fresh cilantro
- Lime wedges for serving
Instructions
- Preheat your grill or stovetop grill pan over medium-high heat.
- In a small bowl, mix together the olive oil, salt, black pepper, garlic powder, and smoked paprika. Rub this mixture all over the chicken breasts.
- Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F. Remove from the grill and let it rest for 5 minutes.
- In a small saucepan, combine honey and chipotle sauce over low heat. Stir until warmed and well combined.
- Slice the grilled chicken and drizzle the honey chipotle sauce over the top.
- To assemble the bowls, divide the cooked brown rice among four bowls. Top each with black beans, corn, cherry tomatoes, sliced avocado, and grilled chicken.
- Garnish with chopped cilantro and serve with lime wedges on the side.
