Ingredients

  • 1 pound ground beef
  • 1 pound ground lamb
  • 1 cup breadcrumbs
  • 1/4 cup chopped fresh parsley
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon olive oil
  • 1 large onion, diced
  • 4 carrots, sliced
  • 4 potatoes, diced
  • 4 cups beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 cup frozen peas

Instructions

  1. Preheat the oven to 400°F.
  2. In a large bowl, combine the ground beef, ground lamb, breadcrumbs, parsley, Parmesan cheese, egg, garlic, salt, pepper, and Worcestershire sauce. Mix until well combined.
  3. Form the mixture into meatballs, about 1 inch in diameter.
  4. Heat olive oil in a large oven-safe pot over medium heat. Add the meatballs and brown on all sides, about 5 minutes. Remove the meatballs and set aside.
  5. In the same pot, add the onion, carrots, and potatoes. Sauté for about 5 minutes until the vegetables begin to soften.
  6. Stir in the beef broth, tomato paste, thyme, and rosemary. Bring to a simmer.
  7. Return the meatballs to the pot, cover, and transfer to the oven. Bake for 30 minutes.
  8. Remove from the oven, stir in the frozen peas, and let sit for 5 minutes before serving.

Notes

  • For a spicier kick, add a pinch of red pepper flakes to the meatball mixture.
  • Substitute ground turkey for a lighter version of the meatballs.
