A comforting Irish Meatball Stew that combines ground beef and lamb with hearty vegetables and flavorful herbs.

- 1 pound ground beef
- 1 pound ground lamb
- 1 cup breadcrumbs
- 1/4 cup chopped fresh parsley
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon Worcestershire sauce
- 1 tablespoon olive oil
- 1 large onion, diced
- 4 carrots, sliced
- 4 potatoes, diced
- 4 cups beef broth
- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 cup frozen peas
Instructions
- Preheat the oven to 400°F.
- In a large bowl, combine the ground beef, ground lamb, breadcrumbs, parsley, Parmesan cheese, egg, garlic, salt, pepper, and Worcestershire sauce. Mix until well combined.
- Form the mixture into meatballs, about 1 inch in diameter.
- Heat olive oil in a large oven-safe pot over medium heat. Add the meatballs and brown on all sides, about 5 minutes. Remove the meatballs and set aside.
- In the same pot, add the onion, carrots, and potatoes. Sauté for about 5 minutes until the vegetables begin to soften.
- Stir in the beef broth, tomato paste, thyme, and rosemary. Bring to a simmer.
- Return the meatballs to the pot, cover, and transfer to the oven. Bake for 30 minutes.
- Remove from the oven, stir in the frozen peas, and let sit for 5 minutes before serving.
Notes
- For a spicier kick, add a pinch of red pepper flakes to the meatball mixture.
- Substitute ground turkey for a lighter version of the meatballs.
