Instructions
- In a large bowl, combine the chopped romaine, cherry tomatoes, cucumber, bell pepper, red onion, chickpeas, black olives, mozzarella balls, parsley, and Parmesan cheese.
- In a separate small bowl, whisk together the olive oil, red wine vinegar, oregano, garlic powder, salt, and pepper until well combined.
- Pour the dressing over the salad and toss gently to combine. Adjust seasoning if necessary.
- Serve immediately or refrigerate for 30 minutes to allow the flavors to meld.
