Ingredients

  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 medium carrots, sliced
  • 2 celery stalks, sliced
  • 8 cups chicken broth
  • 1 cup uncooked orzo pasta
  • 2 cups cooked chicken, shredded
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.
  2. Stir in the minced garlic, sliced carrots, and celery. Cook for an additional 5 minutes, stirring occasionally.
  3. Pour in the chicken broth and bring the mixture to a boil.
  4. Once boiling, add the uncooked orzo pasta and cook for about 8-10 minutes, or until the pasta is al dente.
  5. Stir in the shredded chicken, lemon juice, and dried oregano. Season with salt and pepper to taste.
  6. Simmer for another 5 minutes to heat through.
  7. Serve hot, garnished with fresh parsley and lemon wedges on the side.

Notes

  • For a creamier soup, stir in 1/2 cup of heavy cream just before serving.
  • To make it a heartier meal, add a cup of chopped spinach or kale in the last few minutes of cooking.
