Description

Monterey Chicken Spaghetti is a delicious and hearty dish that combines tender chicken, spaghetti, and a flavorful barbecue sauce topped with melted Monterey Jack cheese.


Ingredients

  • 2 cups cooked spaghetti
  • 1 pound boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 cup barbecue sauce
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced green bell pepper
  • 1/2 cup diced onion
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large pot, cook the spaghetti according to package instructions. Drain and set aside.
  3. Season the chicken breasts with salt, pepper, garlic powder, paprika, and cayenne pepper (if using).
  4. In a large skillet, heat olive oil over medium-high heat. Add the seasoned chicken and cook for 6-7 minutes on each side, or until fully cooked and no longer pink in the center. Remove from skillet and let rest for a few minutes before slicing.
  5. In the same skillet, add the diced red and green bell peppers and onion. Sauté for about 3-4 minutes until softened.
  6. In a large mixing bowl, combine the cooked spaghetti, sautéed vegetables, barbecue sauce, and half of the Monterey Jack cheese. Mix well to combine.
  7. Transfer the spaghetti mixture to a greased 9×13 inch baking dish. Top with sliced chicken and sprinkle the remaining Monterey Jack cheese on top.
  8. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  9. Remove from the oven and let cool for a few minutes. Garnish with fresh parsley if desired before serving.

Notes

  • For a spicier kick, add jalapeños or use a spicy barbecue sauce.
  • Substitute the Monterey Jack cheese with cheddar or pepper jack for a different flavor profile.
