Ingredients

  • 1 (14.75-ounce) can of pink salmon, drained and flaked
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped bell pepper
  • 1/4 cup mayonnaise
  • 1 large egg
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon juice
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil (for frying)

Instructions

  1. In a large mixing bowl, combine the flaked salmon, breadcrumbs, chopped onion, chopped bell pepper, mayonnaise, egg, Dijon mustard, lemon juice, garlic powder, salt, and black pepper. Mix until well combined.
  2. Shape the mixture into patties, about 2-3 inches in diameter. You should have approximately 8 patties.
  3. Heat the olive oil in a large skillet over medium heat. Once hot, add the salmon patties to the skillet in batches, being careful not to overcrowd the pan.
  4. Cook the patties for about 4-5 minutes on each side, or until golden brown and crispy. Remove from the skillet and place on a paper towel-lined plate to drain excess oil.
  5. Serve warm with your favorite dipping sauce or on a bun as a salmon burger.

Notes

  • For added flavor, mix in some fresh herbs like dill or parsley into the salmon mixture.
  • Substitute the breadcrumbs with crushed crackers or panko for a different texture.
