Sausage and Egg Breakfast Pies are a delicious and hearty breakfast option, perfect for any morning.


Ingredients

  • 1 pound breakfast sausage
  • 1 cup shredded cheddar cheese
  • 6 large eggs
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 package (1 lb) refrigerated pie crusts (2 crusts)
  • 1 tablespoon chopped fresh chives (optional)

Instructions

  1. Preheat the oven to 375°F.
  2. In a large skillet over medium heat, cook the breakfast sausage until browned and fully cooked, breaking it apart with a spatula. Drain any excess grease and set aside to cool slightly.
  3. In a mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined. Stir in the cooked sausage and shredded cheddar cheese.
  4. Roll out one pie crust and fit it into a 9-inch pie pan. Pour the sausage and egg mixture into the crust.
  5. Roll out the second pie crust and place it over the filling. Crimp the edges to seal and cut a few slits in the top crust to allow steam to escape.
  6. Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown and the filling is set.
  7. Let cool for 10 minutes before slicing.

Notes

  • For a spicier kick, add 1/2 teaspoon of red pepper flakes to the egg mixture.
  • You can also substitute the cheddar cheese with pepper jack or mozzarella for a different flavor profile.
