- 4 large eggs
- 1 cup milk
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon

- Butter or cooking spray for frying
- Maple syrup for serving
Instructions
- Begin by flattening each slice of bread with a rolling pin until thin.
- Place about 2 tablespoons of the crumbled sausage at one end of each slice of bread and roll it up tightly.
- In a shallow bowl, whisk together the eggs, milk, vanilla extract, cinnamon, and sugar until well combined.
- Heat a skillet or griddle over medium heat and add a little butter or cooking spray to coat the surface.
- Dip each rolled-up bread piece into the egg mixture, ensuring it is fully coated.
- Place the coated roll-ups seam side down in the skillet and cook for about 2-3 minutes on each side, or until golden brown.
- Remove from the skillet and serve warm with maple syrup drizzled on top.
Notes
- For a sweeter twist, add a sprinkle of powdered sugar on top before serving.
- Substitute the sausage with cooked bacon or ham for a different flavor profile.
