- 2 tablespoons olive oil
- 1 pound chicken breast, cut into bite-sized pieces
- 1 pound apple chicken sausage, sliced
- 2 cups Brussels sprouts, trimmed and halved
- 2 cups sweet potatoes, peeled and diced
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the chicken pieces, sliced apple sausage, Brussels sprouts, and sweet potatoes.
- Drizzle the olive oil over the mixture and sprinkle with garlic powder, onion powder, smoked paprika, salt, and pepper. Toss everything together until well coated.
- Spread the mixture evenly on a large baking sheet.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender, stirring halfway through.
- Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving.
Notes
- For added flavor, squeeze fresh lemon juice over the dish before serving.
- You can substitute the Brussels sprouts with green beans or broccoli for a different vegetable option.
