- 2 cups fresh morel mushrooms, cleaned and chopped
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 package (1 pound) refrigerated pie crusts (2 crusts)
- 1 egg, beaten (for egg wash)
- Flour, for dusting
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 4-5 minutes. Add the minced garlic and thyme, cooking for an additional minute until fragrant.
- Stir in the chopped morel mushrooms and cook until they are tender and any moisture has evaporated, about 5-7 minutes. Season with salt and pepper. Remove from heat and let cool slightly.
- In a mixing bowl, combine the ricotta cheese and shredded mozzarella. Add the cooled mushroom mixture and mix until well combined.
- Roll out one pie crust on a lightly floured surface. Use a round cutter or a bowl to cut out circles about 5 inches in diameter.
- Place a generous tablespoon of the mushroom filling in the center of each circle. Fold the dough over to create a half-moon shape and press the edges to seal. Use a fork to crimp the edges for a decorative touch.
- Transfer the hand pies to the prepared baking sheet. Brush the tops with the beaten egg for a golden finish.
- Bake in the preheated oven for 20-25 minutes, or until golden brown. Allow to cool for a few minutes before serving.
Notes
- For a vegetarian option, substitute the ricotta and mozzarella with a vegan cheese alternative.
- Add a pinch of red pepper flakes to the filling for a spicy kick, or mix in some sautéed spinach for added flavor and nutrition.
