  • 1 tablespoon olive oil

  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 package (1 pound) refrigerated pie crusts (2 crusts)
  • 1 egg, beaten (for egg wash)
  • Flour, for dusting

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 4-5 minutes. Add the minced garlic and thyme, cooking for an additional minute until fragrant.
  3. Stir in the chopped morel mushrooms and cook until they are tender and any moisture has evaporated, about 5-7 minutes. Season with salt and pepper. Remove from heat and let cool slightly.
  4. In a mixing bowl, combine the ricotta cheese and shredded mozzarella. Add the cooled mushroom mixture and mix until well combined.
  5. Roll out one pie crust on a lightly floured surface. Use a round cutter or a bowl to cut out circles about 5 inches in diameter.
  6. Place a generous tablespoon of the mushroom filling in the center of each circle. Fold the dough over to create a half-moon shape and press the edges to seal. Use a fork to crimp the edges for a decorative touch.
  7. Transfer the hand pies to the prepared baking sheet. Brush the tops with the beaten egg for a golden finish.
  8. Bake in the preheated oven for 20-25 minutes, or until golden brown. Allow to cool for a few minutes before serving.
