Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 8 ounces linguine or spaghetti
  • 4 tablespoons unsalted butter
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup dry white wine (such as Sauvignon Blanc)
  • Juice of 1 lemon
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped
  • Lemon wedges for serving

Instructions

  1. Cook the linguine or spaghetti according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta cooking water.
  2. In a large skillet over medium heat, melt the butter and olive oil together.
  3. Add the minced garlic and red pepper flakes (if using) to the skillet and sauté for about 1 minute, until fragrant.
  4. Increase the heat to medium-high and add the shrimp to the skillet. Cook for 2-3 minutes, stirring occasionally, until the shrimp turn pink and opaque.
  5. Pour in the white wine and lemon juice, and let it simmer for 2-3 minutes to reduce slightly. Season with salt and pepper to taste.
  6. Add the cooked pasta to the skillet, tossing to combine. If the mixture seems dry, add a little of the reserved pasta water until the desired consistency is reached.
  7. Stir in the chopped parsley and remove from heat. Serve immediately with lemon wedges on the side.

Notes

  • For a creamier sauce, add 1/4 cup of heavy cream after adding the white wine.
  • Substitute shrimp with scallops or chicken for a different protein option.
