Ingredients

  • 1 pound ground beef
  • 2 medium sweet potatoes, peeled and diced (about 2 cups)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup corn (fresh, frozen, or canned)
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/4 cup fresh cilantro, chopped (for garnish)
  • 1 avocado, diced (for garnish)
  • Lime wedges (for serving)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook for about 3-4 minutes until it becomes translucent.
  2. Add the minced garlic and diced red bell pepper to the skillet. Sauté for another 2-3 minutes until the peppers soften.
  3. Increase the heat to medium-high and add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if necessary.
  4. Stir in the diced sweet potatoes, chili powder, cumin, smoked paprika, salt, and pepper. Mix well to combine.
  5. Add 1/2 cup of water to the skillet, cover, and reduce the heat to medium. Cook for about 10-15 minutes, stirring occasionally, until the sweet potatoes are tender.
  6. Once the sweet potatoes are cooked, stir in the black beans and corn. Cook for an additional 3-5 minutes until heated through.
  7. Remove from heat and garnish with fresh cilantro and diced avocado. Serve with lime wedges on the side.
