Ingredients

  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 4 cups chicken broth
  • 1 cup water
  • 2 tablespoons soy sauce
  • 1 tablespoon sriracha (adjust to taste)
  • 1 package (12 ounces) frozen dumplings (chicken or vegetable)
  • 1 cup baby spinach
  • 2 green onions, sliced
  • 1 tablespoon sesame oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.
  2. Stir in the minced garlic and ginger, cooking for an additional 1-2 minutes until fragrant.
  3. Pour in the chicken broth and water, then add the soy sauce and sriracha. Bring the mixture to a boil.
  4. Once boiling, carefully add the frozen dumplings to the pot. Reduce the heat to a simmer and cook for 8-10 minutes, or until the dumplings are heated through.
  5. Add the baby spinach and cook for another 2 minutes until wilted.
  6. Stir in the sesame oil and season with salt and pepper to taste.
  7. Serve hot, garnished with sliced green onions.

Notes

  • For extra heat, add sliced jalapeños or more sriracha.
  • Substitute the dumplings with homemade ones or use tofu for a vegetarian option.
