- 1 pound flank steak, thinly sliced
- 1 cup fresh spinach, chopped
- 1 cup cream cheese, softened
- 1 cup shredded mozzarella cheese
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- Toothpicks or kitchen twine for securing
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine the cream cheese, mozzarella cheese, chopped spinach, minced garlic, salt, pepper, and Italian seasoning. Mix until well combined.
- Lay the flank steak slices flat on a clean surface. If the slices are too thick, gently pound them with a meat mallet to about 1/4 inch thickness.
- Spread a generous layer of the cheese and spinach mixture over each slice of steak.
- Starting from one end, carefully roll each steak slice tightly into a pinwheel shape. Secure the ends with toothpicks or tie with kitchen twine.
- Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the pinwheels for about 2-3 minutes on each side until browned.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the steak is cooked to your desired doneness.
- Remove from the oven and let rest for 5 minutes before slicing into pinwheels. Serve warm.
