- 1 pound ground turkey
- 2 tablespoons vegetable oil
- 1 cup broccoli florets
- 1 bell pepper, sliced (any color)
- 1 cup snap peas
- 1 carrot, julienned
- 3 green onions, chopped
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1/4 cup teriyaki sauce
- 2 teaspoons sesame oil
- 1 tablespoon sesame seeds (optional)
- Cooked rice or quinoa, for serving
Instructions
- Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add the ground turkey and cook until browned and cooked through, about 5-7 minutes.
- Add the minced garlic and ginger to the skillet, stirring for about 1 minute until fragrant.
- Add the broccoli, bell pepper, snap peas, and carrot to the skillet. Stir-fry the vegetables for about 3-5 minutes until they are tender-crisp.
- Pour the teriyaki sauce and sesame oil over the turkey and vegetables, stirring well to combine. Cook for an additional 2-3 minutes until everything is heated through.
- Remove from heat and sprinkle with sesame seeds and chopped green onions before serving.
- Serve the stir-fry over cooked rice or quinoa.
Notes
- For a spicier kick, add red pepper flakes or sriracha to the stir-fry.
- You can substitute the ground turkey with ground chicken or tofu for a vegetarian option.
