Description
A flavorful and hearty Tex-Mex Tater Tot Casserole that combines ground beef, beans, corn, and cheese, topped with crispy tater tots.

- 2 pounds ground beef
- 1 medium onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) corn, drained
- 1 can (10 ounces) diced tomatoes with green chilies
- 1 packet (1 ounce) taco seasoning
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 1 bag (32 ounces) frozen tater tots
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
Instructions
- In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat.
- Add the diced onion, bell pepper, and minced garlic to the skillet. Cook until the vegetables are softened, about 5 minutes.
- Stir in the black beans, corn, diced tomatoes, and taco seasoning. Mix well and let simmer for 5 minutes. Season with salt and pepper to taste.
- In a large bowl, combine the beef mixture with the sour cream and half of the shredded cheddar cheese. Mix until well combined.
- Spray the inside of a slow cooker with cooking spray. Layer half of the tater tots on the bottom of the slow cooker.
- Pour the beef mixture over the tater tots, spreading it evenly. Top with the remaining tater tots and sprinkle the rest of the cheddar cheese on top.
- Cover and cook on low for 4 to 6 hours or on high for 2 to 3 hours, until the tater tots are heated through and the cheese is melted.
- Once cooked, garnish with chopped cilantro before serving.
Notes
- For a spicier version, add diced jalapeños to the beef mixture or use spicy taco seasoning.
- You can also substitute ground turkey or chicken for a lighter option.
