A deliciously easy Turkey Taco Soup recipe that is perfect for a cozy meal.

- 1 pound ground turkey
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced (any color)
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) corn, drained
- 1 can (15 ounces) diced tomatoes (with juice)
- 1 can (8 ounces) tomato sauce
- 2 cups chicken broth
- 2 tablespoons taco seasoning
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 tablespoon olive oil
- Optional toppings: shredded cheese, sour cream, avocado, cilantro, tortilla chips
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and bell pepper, sautéing for about 5 minutes until softened.
- Stir in the minced garlic and cook for an additional minute.
- Add the ground turkey to the pot, breaking it apart with a spoon. Cook until browned and no longer pink, about 6-8 minutes. Drain any excess fat if necessary.
- Stir in the black beans, corn, diced tomatoes, tomato sauce, chicken broth, taco seasoning, cumin, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 20-25 minutes, stirring occasionally.
- Taste and adjust seasoning if needed. If you prefer a thicker soup, let it simmer longer.
- Serve hot, garnished with your choice of toppings.
Notes
- For a spicier kick, add diced jalapeños or a dash of hot sauce while cooking.
- You can also substitute ground turkey with ground beef or chicken for a different flavor.
