Ingredients

  • 1 pound ground turkey
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced (any color)
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 1 can (15 ounces) diced tomatoes (with juice)
  • 1 can (8 ounces) tomato sauce
  • 2 cups chicken broth
  • 2 tablespoons taco seasoning
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Optional toppings: shredded cheese, sour cream, avocado, cilantro, tortilla chips

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and bell pepper, sautéing for about 5 minutes until softened.
  2. Stir in the minced garlic and cook for an additional minute.
  3. Add the ground turkey to the pot, breaking it apart with a spoon. Cook until browned and no longer pink, about 6-8 minutes. Drain any excess fat if necessary.
  4. Stir in the black beans, corn, diced tomatoes, tomato sauce, chicken broth, taco seasoning, cumin, salt, and pepper.
  5. Bring the mixture to a boil, then reduce the heat and let it simmer for 20-25 minutes, stirring occasionally.
  6. Taste and adjust seasoning if needed. If you prefer a thicker soup, let it simmer longer.
  7. Serve hot, garnished with your choice of toppings.

Notes

  • For a spicier kick, add diced jalapeños or a dash of hot sauce while cooking.
