Description
A refreshing and healthy Tzatziki Chicken Salad that combines tender chicken with a creamy yogurt dressing and fresh vegetables.
Ingredients

- 2 cups cooked chicken, shredded or diced
- 1 cup plain Greek yogurt
- 1 medium cucumber, grated and excess moisture squeezed out
- 2 cloves garlic, minced
- 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
- 1 tablespoon lemon juice
- 1 teaspoon olive oil
- Salt and pepper to taste
- 1/4 cup red onion, finely chopped
- 1/4 cup cherry tomatoes, halved
- 1/4 cup feta cheese, crumbled (optional)
Instructions
- In a large mixing bowl, combine the Greek yogurt, grated cucumber, minced garlic, dill, lemon juice, olive oil, salt, and pepper. Mix until well blended.
- Add the shredded chicken, red onion, and cherry tomatoes to the bowl. Gently fold the ingredients together until everything is evenly coated with the tzatziki mixture.
- If using, sprinkle the crumbled feta cheese on top and gently mix it in.
- Taste and adjust seasoning with more salt, pepper, or lemon juice if desired.
- Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled.
Notes
- For a lighter version, substitute half of the Greek yogurt with low-fat yogurt.
- Add diced bell peppers or avocado for extra flavor and nutrition.
