Step-by-Step Instructions
  1. Preheat the oven to 302°F (150°C). Peel garlic and place in a ramekin, using olive oil and salt. Cover with foil and roast for 1 hour and 45 minutes.
  2. Combine warm milk, active dry yeast, and honey in a bowl. Stir gently and let sit for 10-15 minutes until frothy.
  3. Mix in the eggs, all-purpose flour, bread flour, salt, and sugar. Knead until soft and slightly sticky for 8-10 minutes.
  4. Gradually add softened unsalted butter into the dough during the last 10 minutes of kneading until fully incorporated.
  5. Transfer dough to a greased bowl, cover, and let rise in a warm place for about 1 to 1.5 hours until doubled in size.
  6. Punch down the risen dough, roll out into a rectangle, spread roasted garlic and garlic butter, then sprinkle with cheeses. Cut into strips and roll into spirals.
  7. Let the shaped rolls rise for another 30 minutes in a warm spot.
  8. Preheat your oven to 355°F (180°C). Brush rolls with an egg wash and bake for 25-30 minutes until golden brown.
