  • 3 cups fresh strawberries hulled and sliced
  • 2 cups blueberries
  • 2 cups mandarin oranges drained
  • 2 cups pineapple chunks fresh or canned
  • 1 cup kiwi peeled and sliced
  • 1/4 cup fresh mint leaves chopped
  • 1 tablespoon honey
  • 1 tablespoon lime juice
  • 1 tablespoon orange juice

Method
 

  1. In a large mixing bowl, combine the strawberries, blueberries, mandarin oranges, pineapple chunks, and kiwi. Gently toss the fruit together to mix.
  2. In a small bowl, whisk together the honey, lime juice, and orange juice until well combined.
  3. Drizzle the honey mixture over the fruit salad and gently toss again to coat the fruit evenly.
  4. Add the chopped mint leaves and toss lightly to incorporate.
  5. Cover the salad and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
