If desired, drizzle olive oil and lemon juice over the vegetables for added flavor.
Starting from one edge, carefully roll the tortilla tightly to form a wrap.
Slice the wrap in half diagonally and serve immediately, or wrap in plastic wrap and refrigerate for up to 2 hours before serving.
