  • 1 pound raw shrimp peeled and deveined
  • 1/2 cup breadcrumbs
  • 1/4 cup mayonnaise
  • 1/4 cup green onions finely chopped
  • 1/4 cup red bell pepper finely chopped
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon Old Bay seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg beaten
  • 2 tablespoons olive oil for frying

Method
 

  1. Begin by chopping the shrimp into small pieces. You can use a food processor for a finer texture if desired, but be careful not to puree them.
  2. In a large mixing bowl, combine the chopped shrimp, breadcrumbs, mayonnaise, green onions, red bell pepper, Dijon mustard, lemon juice, garlic powder, Old Bay seasoning, salt, black pepper, and the beaten egg. Mix until all ingredients are well incorporated.
  3. Cover the mixture and refrigerate for at least 30 minutes to allow it to firm up and make it easier to shape.
  4. After chilling, form the mixture into patties, about 2-3 inches in diameter. You should get around 8-10 patties.
  5. Heat olive oil in a large skillet over medium heat. Once hot, add the shrimp cakes in batches, being careful not to overcrowd the pan.
  6. Cook for about 4-5 minutes on each side, or until golden brown and cooked through. Transfer to a paper towel-lined plate to drain excess oil.
  7. Serve warm with your favorite dipping sauce, such as cocktail sauce or tartar sauce.
