Preparation
- Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking pan with non-stick spray or butter.
- In a medium bowl, combine graham cracker crumbs, melted unsalted butter, and granulated sugar. Press into the bottom of the prepared pan.
- Bake the crust for 8 minutes until lightly golden. Let it cool completely.
- In a large bowl, beat the cream cheese until smooth. Gradually mix in ricotta, powdered sugar, eggs, vanilla extract, citrus zest, and cinnamon.
- Gently fold in mini chocolate chips. Pour the cheesecake filling over the cooled crust.
- Bake for 35–40 minutes until the center jiggles slightly. Keep an eye on the edges.
- Cool at room temperature for 30 minutes, then refrigerate for at least 4 hours or overnight.
- Dust the top with powdered sugar, slice into squares, and garnish with chocolate chips or crushed pistachios.
