Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking pan with non-stick spray or butter.
  2. In a medium bowl, combine graham cracker crumbs, melted unsalted butter, and granulated sugar. Press into the bottom of the prepared pan.
  3. Bake the crust for 8 minutes until lightly golden. Let it cool completely.
  4. In a large bowl, beat the cream cheese until smooth. Gradually mix in ricotta, powdered sugar, eggs, vanilla extract, citrus zest, and cinnamon.
  5. Gently fold in mini chocolate chips. Pour the cheesecake filling over the cooled crust.
  6. Bake for 35–40 minutes until the center jiggles slightly. Keep an eye on the edges.
  7. Cool at room temperature for 30 minutes, then refrigerate for at least 4 hours or overnight.
  8. Dust the top with powdered sugar, slice into squares, and garnish with chocolate chips or crushed pistachios.
